Individual Rice Kernel Drying Curves
نویسندگان
چکیده
Drying data for individual rice kernels and bulk samples selected from various tillers of a plant and from different maturity groups were experimentally obtained. The data showed that over 93% of the drying occurred within 24 h of exposure to air at 40° C and 60% relative humidity. Differences in the equilibrium moisture content and drying rate constant among kernels were observed. Equilibrium moisture content was determined to be a function of kernel width, and the drying constant was found to be a function of initial moisture content and the ratio of kernel width to thickness.

Development and Validation of Mass Transfer Model for rough Rice (Sepidrod) Kernel drying
Rapid drying can increase brittleness and induce internal cracks which predispose the product to breakage during subsequent activities. The drying process must be understood and controlled so that design guidelines which reduce or minimize drying damage to rough rice can be established and improved. This study is to give a mathematical model with numerical solution to follow the mass distributi...
متن کاملInfluence of Drying on Rice Fissure Formation Rates and Mechanical Strength Distributions
Tests were conducted to determine the effects of drying conditions on the rate of fissure formation after drying and the resultant mechanical strength distributions of individual rice kernels. Long-grain varieties Cypress, Drew, and Wells at 21% harvest moisture content (HMC) were dried at 40°C, 45°C, 50°C, 55°C, and 60°C and constant 17% relative humidity (RH) to 12% MC. Immediately after dryi...
متن کاملKernel Moisture Content Variation in Equilibrated Rice Samples
An individual kernel moisture meter and an individual kernel oven drying procedure were used to quantify the kernel-to-kernel moisture content (MC) variation in equilibrated rough rice samples varying in MC from 9 to 37%, w.b. Average, bulk sample MCs were also determined using an oven drying method. No difference (p < 0.05) was found in the average MCs measured by the meter at three weeks or t...
متن کاملThe Glass Transition Temperature Concept in Rice Drying and Tempering: Effect on Drying Rate
Research on rice drying and tempering has shown that high drying temperatures (up to 603C) and high moisture removal rates (up to 6 percentage points moisture content) can be used without reducing milling quality as long as sufficient tempering at a temperature above the glass transition temperature (Tg) is allowed between drying passes. Using drying air temperatures above the Tg of the rice si...

Traditional paddy dryer systems in Iran cause considerable losses in rice production due to non-uniform drying. In order to decrease the amount of kernel fissuring and to increase the drying rate, fluidized bed method was applied in this study for rough rice drying at temperatures higher than normal. An experimental dryer was used for drying the samples. The drying experiments were set up to fi...
